I think there is a bug for the description of deliveries modes
I have 3 different delivery modes: when I update the description for ONE delivery mode, it updates the description for ALL the deliveries modes

you need to setup a delivery product for each delivery mode. in default odoo always use the same product.
This is the answer.
To expand upon it, every Shipping Method that uses the same Delivery Product will also use the same Description. Each method does not necessarily require it's own product, it just has to be grouped appropriately.
For example, I use two for FedEx, one for domestic and one for international (with multiple methods each) so that all my international shipments state our customs policy.
Bumping up this issue, since I've encountered the same problem.
Whenever I update the description of a shipping method (to be shown in the eCommerce), it updates for all the shipping methods.
