I have a simple inquiry: In practice what is more useful or common to use when adding notes to the CRM: Internal Notes or Log Note? The advantage of using Internal Notes is that the user will have to be in Edit mode, and the View List mode, all Opportunities can be ordered by Last Updated.

The advantage of Log Note is that the message itself can't be edited and has a user and date record.
You can also filter opportunities by Log Note time, by creating a user-defined filter where the domain is "messages > last updated On"
