I have a bunch of modules from various repositories on Github. However in the Settings/Local Modules I can't see which directory the particular module are found.

Has anyone ever seen a module to make these visible? (It must be in the DB as part of the Update Modules List command)

All modules are stored under the same directory called Addons unless you specify different in your configuration.

Within Odoo you can see the name of the directory that contains that module.

These are all custom modules that I've loaded from Github, they are not found in the default Addons directory. Where do you see the name of the directory that contains the module?

Go into developer mode and under Apps menu you will now see another option. That one will show like the first option however it will also show all the modules in the Apps Store. In this option under the module name you can see the directory name. Also if you open any you will see a field that says Module Name.
