I have 2/3 tasks within one project that could be combined into one task. Is there a way of merging open tasks into 1?

This can't be done by Odoo out of the box but you can use custom apps like the below:

Sorry, forgot to mention its in Odoo v 15 Enterprise
if you are using Odoo.sh then you can add a custom module.
