How I can change the "from" field value when sending a message because it always has the same email address?

Hi All,
I have configured Outgoing mail server in Odoo V15 for Mass Mailing Purpose and its working fine for Email Marketing App, But here comes a new concern like when ever we are mailing to our customers on the leads / opportunities etc its taking the email from the outgoing email server rather than taking the users email id. So i would like to understand how to roll back the 'From' Email id should be picked from the users email id for the rest of the modules.

This doesn't seem like typical system behaviour. Can you confirm that each user has their own Outgoing Email Server configured?
Additionally, when sending messages from the CRM module, are they manually typed or based on an email template? If it's manually typed, and the user's account has Outgoing Email Server setup, then it should be going through that.

I have the same problem here on Odoo17. Seems completely trivial but I am afraid I need to develop something custom for this....
