Is there a way to skip the process of signing the quotation? Once the client places the order, it will go to the sales.

The sale user can directly click "Confirm" after taking the client order (they can skip 'Save' & 'Send by Email' steps)
Thank You. Yes, Sales can confirm the quotation by themselves.
But it saves some steps for the client that they might forget to do.

Go to Sales > Configuration > Settings and disable the Online Signature setting in the Quotations & Orders section of the page.
