A sales order create an outbound delivery.  You can set up Quality control for related to the delivery (transfer). (Need the Quality app).

Create packages when you manage the delivery.  

There is not a specific shipping status in Odoo, meaning the confirmation that the delivery has been picked up by a forwarder.  When you post staus "Done" the goods are posted out of stock. Odoo has based statuses on that you define a carrier and a tracking reference and then external tracking.
