Excellent! This is the library I'm using.
I would suggest connecting the fingerprint sensor to hardware serial pins 0 and 1 on the Pcduino 3. 

I'm waiting for the screen to arrive this week. 

It might make some sense to standardize on Pcduino 3 + LCD. It's cheap, extremely powerful and we could design a modular case that works with it but leaves some flexibility for additional sensors, controllers etc. 
There might be a tab in the case that can be popped out if you want to use a fingerprint scanner or another tab for a temperature/humidity sensor. 

If someone wants to take the standard Ubuntu Pcduino built and turn it into a kiosk like this
and have an ISO we can download that would be very helpful. 

Also would be nice to be able to set the wifi settings via the same python script. I'd prefer the user never see the Ubuntu desktop.
