We haven't upgraded any customer to 10, yet. But we have upgraded customers from older Odoo (5/6/6.1/7) to 8 under enterprise contract with custom modules and even manual made x_-fields. It has at most got well. You have to upgrade your own modules by you self and let them "upgrade" the finale database. There have been some issues in the transition from using a separate adress-class and issues in stock.move and stock.quant, but nothing a server action can't fix.

Most of the development has been done inhouse so it would be possible for them to do the upgrades of the modules themselves, but we are unsure about the process.

If for example Odoo encounter a table or field that they know nothing about, will it be left out of the upgraded database alltogether or will you be provided a list of such fields etc?

Yeah I know we should be contacting Odoo directly, just thought I'd hear the responses in here first.
