Here is the process:

If a customer go above the maximum limit of users he purchases:
- he gets a message in the home with a link to upgrade his subscription for 30 days.
- if he doesnt upgrade his subscription within the 30 days, the system will stop
- if the system shutdowns, he can still contact us to reactivate it

To avoid any issue, we recommend to: respect maximum number is users or contact us to extend if you want more. If the message appears because you have more users than purchased, don't wait to much before payment. (Write transfers can take a few days to be processed)

As nowadays, Odoo SA have mechanism to ping every server and set database expire in the server which will show on the screen (which is not yet critical).

Technically, what will happen after passing the expiry date? Will Odoo force shutdown the server or something. Anyone have such experiences?

From system point, it is a critical system and can't be shutdown.
