One thing to point out:
POS is not keyboard driven. If you look around in many high volume environments you often still see CLI pos applications. This is for a good reason when it comed to operator efficiency.
We have implemented odoo 8 for a jewelry company who has around 70 shops in different cities.
From our experience:
- we decided to not use touch PoS UI because:
1. we need to work with products in stock in local shop, including availables quantities, lots and series in local shop, not with all list of products;
2. we need to work with price for individual product in local shop, not with pricelists;
3. we need also to be always online because in backoffice can be encoded transactions that affect local stock (products can be reserved for delivery to orders from online shop, central staff can decide to change sale price for some products, some products can be reserved to be transfered to another shop);
4. the local user need also to encode another type of transaction (sale order from customers and s.o.);
5. accounting staff and central/management staff want to see all cash, stock and sales transactions instant for quick decisions, not when session is closed at the end of the day;
6. invoicing, invoice number and workflow can't be managed well in offline session.
- we had to extend PoS backoffice for that. We lose some aspects in terms of touch and graphical aspects, but:
1. We have an responsive application in terms of speed in shops;
2. we have all data instant procesed and consistent in terms of stock, cash and accounting in entiere database;
Now, our customer works with around 150000 of items in stock, mostly with unique serial number and individual price.
Indeed, they have stable internet connections, but what is benefit from offline PoS if you have a central database that not be interogated because you are offline?

In a little shop, you can start the cashiers before opening, let's admit it. But in super-markets, lanes are open/close on the fly, depending on the crowd. The operator has to identify, so I think the POS cannot be "pre-loaded" (can it ?), and usually this happens at rush hours.
