Almost all our environments where migrated to V16.04 in a weekend after 2 days of tests.
Some packages shown little issue but nothing related to python version, the fix was pretty straight forward.
But yes IMHO Odoo should start to migrate but nothing related to Ubuntu, the real reason is because it is strategical python 3 has some very good ones performance enhancements that's it.
But we found some other issues also, be care of that.
