In addition, if you are using manufacturing, or order based on this Grade attribute, you would need to have something to support allocation by grade, meaning that you have 5,000 units of mushrooms, but only 100 of them are the grade required to meet the commitment.

You have a unique business problem and not a standard way to support it.

Let me inject my opinion. I am not sure that product variant is the best usage for your business problem.

A variant is a static version of a core product with an attribute such as a Shirt that comes in Color: Brown, Black, or Size: XL and M. A shirt does not change from a Brown to a Black over time, it is a static definition.

Consider this,
You have 1 product called White Mushroom. No variants.
You would develop/create some attribute that is similar to the Odoo lot functionality. A group of inventory quantity has this attribute called Grade. When the condition of the product changes, such as over time, you can adjust the grade on the specific units in the specific location without requiring any kind of manufacturing hack, adjustment, etc.

You could also have a detailed view on the product level that shows the quantity available grouped by grade and location.

There is no built in functionality that does this, but do you think it could be a better way? I think the point I am trying to make is that the inventory seems to be a more appropriate place to define this information.

My thought was that if I have a manufactured product with a bill of material that requires grade B product, if grade B product is not available, I would like to be able to take a lot of Grade A product, and use it in place of the Grade B product. I would like for a automated job to run in the background that would take the grade A product that I used, and replace it with grade B.

Please help me out here.
