there might be other solutions, but one would be to use the OCA/fiscal-rules modules. the account_fiscal_ruke_* modules let you define rules that will apply the proper fiscal position (what will map your 8% or 10% tax) according to several parameters (and this is customizable). Among the native parameters you already have start and end date for the rule validity, see:
