"Orders to upsell" is not related to service, but to the fact that:
- you invoice based on ordered quantities (not delivered) and
- you delivered more than ordered
It applies to physical, digital and consumable products too, if I am not wrong.
What you need requires customization. It is not supported out of the box. But you can easily produce two invoices: one coming from the SO, the other one coming from the subscription. You don't need to create two document since the subscription is created by the SO.
I saw the following scenario demonstrated at the upgrade training:
If more have been “delivered” (logged) than ordered, use “Orders to Upsell” from Sales à Invoicing for the ability to Invoice any additional hours.
This works depending on the service product configuration (Invoicing and Track Service) – but I am not completely sure yet how to set it up. Try the demo services.

I have a question: If you have a customer with a monthly invoice for some kind of service, then the subscription is the way to do it. But what if you sometimes offer extra services to the customer, for example some hours for some kind of extra work. When you register hours in the timesheet it is possible to select the subscription as the analytic account, but is it possible to add these hours to the next subscription invoice somehow?
Speaking of subscription invoices: Is it possible to send them to the customer (by email) automatically?
