When you define products in Odoo, they have 2 elements:
1. The product template, that defines globally the product and also the different characteristics or attributes for the variants
2. The product variant, that is a unique combination of the attributes.

If you do not use variants, you will still have a unique product variant as the product variant is the final object used in logistics.
