First I tried Graeme's suggestion, enabled the UoS and tried that. It did not work well, even when setting the UoS Odoo expects the sales person to enter the quantity in UoM and will only inform the corresponding qantity in the UoS. Maybe I was doing something wrong but I believe that is how it works and it is not what I need.
Next I followed Nhomar's suggestion and it does work well. Unfortunately I need to have two product entries, one for the product purchased in kg and another for the product sold per piece.

It provides what you want I think: Buy products in a different UoM then you use (KG > pcs) and sell with a coefficient that can be defined individually per product
