Depending on how you wish to setup on AWS, you have a couple options.
1. If you want to install Odoo with one click, you'll find a couple different packages available in the market place. I personally have setup Odoo from a Bitnami package, very easy to do.
2. You can start an Ubuntu instance and then install Odoo on Ubuntu as normal.
3: AWS now has its own Amazon Linux OS that you could try installing on. I tried this one myself as I wanted to get my Odoo server as close to bare metal as possible. My efforts failed though as I didn't find it an easy process. Odoo had a number of different dependencies that were not included with the default install of the Amazon Linux. That said, if you know your way around Linux better than I do, this option may be viable for you.
