Not withstanding that you said postgres, which I really think you meant Odoo, the really simply was is get the sale orders you want in a list and click export.  Disable import-compatible -> Pick your fields (you can chain to any customers fields from there), optionally save them for reuse -> Export to Excel. 

Direct SQL can sometimes be OK for really complicated things the interface can't handle, but really as a last resort IMO for the simple act of exporting data which the interafce handles quite well already.  The example above is a misleading, it is a very basic query where everything is nicely linked and there is no security to worry about, but unless you really understand the data structures and access rules you will soon trip up, either creating insecure queries or just not being able to get the data.  Even little things like the date formats or datetime representations need to be attended to, all things the Odoo interface takes care of for you.

Or exporting the customers pricelist value using SQL or the products cost price.  The point is some of the fields you see on screen are stored in postgres in the tables you expect, some is stored in tables you don't expect, and may require difficult queries to access, and some of it is not stored at all.
