As Peter said, saas-6 is an intermediate snapshot between v8 and v9
intended for odoo.com SaaS and to give a testable preview of the new
features for the future stable version. You can run on saas-X on your
own server but at your own risk (not supported).

v8 is stable and should be used if you wish to install odoo for production.

On instances hosted on odoo.com we take care of upgrade between SaaS
versions but offer upgrade only between stable versions. As saas-6 is
pretty new, I don't think there upgrade scripts out there. But again I
would advise you to consider saas-* versions as previews and not stable
versions.
