Interesting, but it is a little bit more complex.

Centos is a recompilation of the verbatim RedHat sources minus trademarks. There are no functional changes between Centos and RedHat.
Fedora is a fully open source version of development versions of RedHat. It has limited support.

OCA community modules is a very rich set of functional extension on top of core Odoo. If Enterprise Odoo gains additional features, chances are that these features already exist in OCA in one form of the other. Otherwise, they may be developed or not.

OCB (community bugfixes not yet accepted in Odoo) is the canalization of the support that Odoo professionals provide to their customers on core Odoo as an alternative to or in addition to the enterprise contract. It also provided long term support before Odoo SA provided that on all releases (i.e. for 6.1).

Elephant in the room is migration support, which is included in Fedora, RedHat, and Centos but not in core Odoo. The OCA does not advocate or provide one particular migration method (i.e. either the enterprise contract or one of the available open source tools for developers).
