Different approaches possible in this case.
NOT confirm the order, so it keeps changeble.
Documents like order confirmation and others, should be produced in another way than.
Keep the standard procedure, and create a functionality that changes the order based on the final deliveryslip.
So.........just before confirming the delivery, the delivery (items, quantities..........) can be changed, then confirm the delivery and have the order automaticly changed like 100% identical to the delivery.
We created this functionality, based on completely different requirements, but to my opinion it should work in your case.

Hello all, my business is extremely fast paced and high volume. To give some perspective we harvest 200000 pounds of mushrooms each day and on that same day we package and ship 90% of all product harvested.

Taking that into consideration as well as the fact that we have no idea the amount of product we are receiving until it gets to our dock, there are many unknowns with in various orders on a regular basis. This requires us to have to adjust order volumes frequently based on product availability, or customer changes. I may be asking a dumb question but what would be the best way to manage order changes on orders that have already been submitted and confirmed in which a delivery order has already been generated. Deleting and creating a new order is out of the question. I would like to adjust the order that exists because the majority of the time the changes are minor and really only relate to one or two products on an order which may contain 30 different products skus.
