Dear Quentin,
Yes it's one way of doing it. I think Sylëam has modules to do it this 
way, maybe they can tell their point of view.
In our own experience we found this overkill, because we've never 
encountered cases where we need more that 2 categories (UoM + UoS).
Mirroring the existing standard feature UoS from sales looks like a 
simpler and more integrated approach.
