If my customer places an order 1.1.2014 and actually he needs products not until 5.5.2014 what is the correct way to have DO and MO to be placed automatically to the date they need to be done?

I am able to manage that with date field if I only have one delivery time per order but if there's multiple lines in order with different timing there's a problem.
