Is it possible to restart my Odoo 14 community version?
Maybe a way to reset it and start from scratch again?

Please check about creating a new database
I would suggest making a backup copy after setting the basic configuration, and then you can just restore the database. But as Baiju said, if you don't have a backup copy you should check that out.
