Is there a way to have Products / Services that are only optional on Sales Orders. So Products that are not included in the Total Amount of the Sales Order?

There's no official way to manage this (there was on 6.1 by using account_invoice_layout for instance), but you can set the quantity to 0.
This way you'll have your product and its price, but it won't be added to the total.

Hm... i really wonder why such basic functions like "Header" "Subtotal" or options to "Hide Product Price on Sales Order" and "Do not calculate / include price in Sales Order Total" are missing for Sales Orders still. Even in version 7!?!
Are we really the only one who needs such a functionality?!?
