How do I track what I owe each employee so I can inform the payroll company?

I would like to be able to pay on comission, hourly, and salary.

For example:

A sales person sells 4 hours of service. That person should receive, say, 20% of the sale price in commission, or perhaps 5% plus salary.

A tech provides 2 of those hours of service. That person would receive an hourly rate.

A subcontracting tech provides the other two hours of service. That person would also receive an hourly rate.

A manager receives a flat salary rate, or salary plus commission.

 

I don't need all the tax implications and all that, as I will be outsourcing that part. I need to know what to tell them to pay, however. So I need a breakdown of hours worked, salary earned, and commisions earned.  How do I do this?
