I am considering OpenERP for a small pharmaceutical company. Here are my questions, if anyone can help?
- For the On-premise, OpenERP solution, how are version updates handled?
- if we are acquired, will the purchasing organization have a difficult time getting to the data in our ERP system?

For the data dump it's just a regular database that the application uses (PostgreSQL). You should be backing that up regularly anyway. For a one-off dump of the database you can use the pg_dump utility.
