I would like, if it is possible, have one email adress per users:
Tom A will send email with email firstname.lastname@example.org Eric B -> email@example.com Julie C -> firstname.lastname@example.org
For the moment I can use only the outgoing adress ( such as email@example.com ). Is it possible?

If you have configured the outgoing mail correctly, then you will need to add the email (Email Preference is found in User form view) of each user when filling the Users in Settings and then attach each user to the right employees under Human Resources. That works for me. And check that you have not set a generic sales team email which overrides all emails
