What is the oldest supported version we can migrate via the odoo enterprise contract to the newest odoo version? What happens if the LTS end-of-life is reached of this 'old' version we want to migrate? Does the LTS matter for the odoo enterprise contract and the data migration to newer versions?
Let's say we use v5.0 and want to migrate our database via the enterprise contract. Would this be possible even for odoo version 10?

As of the time of writing this answer, the supported versions are 5.0; 6.0; 6.1 and 7.0.
If you are still on an unsupported version, you would need to manage your own data and database migration or engage someone to help you do it.
Generally the last three LTS versions (the current and the two prior to that) are supported with the oldest becoming unsupported when a new LTS is released. My interpretation of this is that 5.0 support ended when 8.0 was released.
