You have to specify atleast an incoming and an outgoing external mail server and a catchall mail account. Then you can define as many email aliases as you want. You can also setup your own mail server on your AWS instance using postfix for example. However, I recommend you to google for "odoo" and "mail server" in order to get more indepth information about email handling by odoo.
