You can create an Automated Action that catches the emails just before they are sent and changes the address, just for helpdesk tickets:


if record.model == 'helpdesk.ticket':
    record['email_from'] = 'helpdesk@odoo.com'
    record['reply_to'] = 'helpdesk@odoo.com'
