do you mean a use case like this one?
You sell watermelons by unit, but the price is computed base on the weight of the watermelon. The final price is only known before shipping because you don't know in advance which one will be sent to the customer.
Do you store the credit card information of the customer? In this case, you could cancel the first transaction and initiate a new one with the final amount. Additional the invoice should also be modified.
If you don't have the credit card information, I do not think it's possible to change the amount of transaction afterwards.
Unfortunately, this is not a solution, but the exchange of ideas can sometimes bring new solutions.
