Odoo is the world's easiest all-in-one management software. It includes hundreds of business apps:

The context of this answer is "online OpenERP V7" and Windows First: select the list of products for which you need to change their Category (works for Category or POS Category); you do this selection using the search small window (right top of the screen), selection of the filter (standard or "advanced search); the click the boxes on the left of product title (you can select all at once with the upper box; here there is an hidden hint: by default the number of lines is set to 80; but if you let the mouse on the "1-80" you discover that you can select higher walues for the number of lines to select (80, 100, 200, 500, UNLIMITED);
Second step: once you have selected the products to export, go to the "More" menu on top of the window, where you find the export button. Select it!
Third step: select the fields from the left pane and add them to the right pane; you need at least to select the fields: Name and category. Then click on export on the left bottom of the window. This exports your selected data to a file (in a folder that appears to be your default folder for downloads); this file is a CSV format file.
Fourth: open the file (default name is "product.product.csv) with you spreadsheet program (openoffice calc or MS excel). You will be asked to select some attributes before the opening: select UTF-8 / , .
Fifth step: review the data, change the categories you need to change, save the file (always with the same attributes as above (UTF-8 / ,). Nota bene: to know which Category values to use, you do the same process of export/import, using the Category menu.
Sixth step: go back to OpenERP, select the import button, select your saved product.product.csv file. Press the Validate button (top right of the screen); ik every thing "seems valid" (green message), then import. If the validation step indicates error or missing columns or unknown values in your file, then Check the column headers, change either the column header OR the new values in your csv file, when you are prompted to do do it!!! This step may need some errors and essay trials.
Verify then that the products now have your new categories.
