Update :

- My error is when sale_order module loads;

- I have tried with 3 differents databases from 3 different dates : doesn't work, same error;

- I have updated files from github : doesn't work, same error;

- I have create a new database : odoo starts;

Something is trying to find a file (or a menu item) that you have deleted... Only you could know what you have deleted. You might have to reload the original modules to fix this and if you are working in developer mode instead of custom modules you will probably lose a lot of work. My best guess is you deleted a menu item or menu item action. But it could be almost anything linking to a menu.

When you create a new db and odoo starts after refreshing files from github, that tells me that the files in postgresql db are not updating; try using command line -d dbname -u all to refresh the postgresql loaded modules. The error might happen when loading sale_order but it could be a reference to another module that is triggering the error.

I have successfully restore a backup of the database. Probably  a <menuitem> tag in a custom view... Will close this post.
