From my understanding,
"The asset cost includes the purchase price, shipping, installation, sales tax, and other expenses associated with its purchase."
But in Odoo, it only takes the Product Price for the asset value.
Is this logical?
Or I miss any configuration?

I think you are right. Creating assets directly from purchase orders only is relevant if a few cases. Also since only asset category is available from the invoice. So each invoie will create a new asset. Manual maintenance of the value is normally necessary.
