When I send e-mails to company members or clients, they are delivered properly. But if I for instance log in on "User A" and send an e-mail to the client, "User B" and myself ("User A") - they email will get sent to "User B" and the client. "User A" receives no e-mail. If I log in under "User B" and send an e-mail to "User A", the client and myself ("User B") - then "User A" does receive an e-mail but "User B" is left out.

So If you send to yourself, it doesn't work. This is quite annoying as I would like to send a copy to myself if I send clients their quotations for instance.

It may have something to do with the "FROM" variable, because users receive e-mails from "UserA"@company.com & "UserB"@company.com rather than info@company.com.

A long story short: where in the UI can I choose from where the e-mails appear to be sent?

In the email template, but there it will say "the email address of the user", which you can find back in the Preferences menu in the top right.
