In Odoo, the SUBSCRIPTION creation is triggered by the Sales Order.
Can we modify the trigger to create the SUBSCRIPTION with the status “NEW” instead of “IN PROGRESS” after the Sales Order has been done.

Yes, just create an automated action so that whenever a subscription is created, the system changes the status of the subscription to New.
