Yes, this can be done. For sales person and payment terms its automatically filled when you select a customer.

For other fields you can either build you custom app if you are on Odoo.sh or on-promise. if your system in Odoo online with custom plan, you can add these fields to customer card using studio and then using the automated action you get the data from customer card to SO when you select a customer.
