How do i set up an odoo instance for a company that only processes the products(does not own them or the inventory? and invoices on tons manufactured?

you can enter the customer provided materials in your inventory at zero cost so you can track them if needed and use them in bills of materials etc..
In this case, your company is only providing services. Set up your products as services.
In this case I suggest to use Project Application instead of Manufacturing. And set different stages like Started Production, Finished Production, Delivered the Product,...
