Let's say I bought the odoo studio for one year, and I updated lot of fields by using studio, then in the next year, I will not buy it; Therefore, my question is will all my fields that I added from the previous year lost? or any other problems?

Yes it will remove all custom fields, custom models, custom views and custom reports that is customised or created with odoo studio
