You can do adjustments from product it self or from the "Physical Inventory" under the "Operations" menu in inventory. But bulk adjustment is not possible in v18. If it is necessary you can check for modules in app store
Bulk adjustments are done via importing. This is more advanced but possible. Normally you would EXPORT the list of product to be counted (same Menu) and make sure to check "I want to update data (import-compatible export)" from the Export dialog.
