Hello Joseph,

You can test it by duplicating your database for testing purposes. There you can create the Subscription Sales Order. 

When you create the SO, you will define starting and ending date of the subscription. Every month, Odoo will generate your monthly invoice.

Regarding payments, in Mexico we only have stripe, paypal and mercado pago as payment providers only.

I could be wrong but believe it doesnt work as in charging upfront or automatically for the for future periods. In general in order to be able to charge per credit card upfront or automatically, the payment provider needs to be PCI certified. 
As for the process in Odoo I believe it will at most create for every period an invoice and charging would be separately. In this case you may use any payment provider.
