There are quite some ways to learn Odoo. One of the best ways to learn how Odoo works and what it has on a technical level is by looking at the official code. You can find it at https://github.com/odoo/odoo
Odoo also has some nice tutorials and/or documentation at https://www.odoo.com/documentation/12.0/ - the best point to start is at https://www.odoo.com/documentation/12.0/howtos/backend.html
