My tax and account are different for service and stockable product. Is the only way to enforce this through defaults set directly on the product?

You can also define default taxes and accounts for product categories (but this does not work on products already defined). If you want to apply those defaults to existing products, you may want to export and re-import the products with the proper defaults.
