How can I create a helpdesk ticket from "Service" product like how it automatically does with projects?

You can create a Service Product that creates a Task in the Field Service Project like this:

Just choose your Invoicing Policy - are you charging before you do the work (prepaid), based on hours (timesheets), or manually (you will adjust the delivered quantity on the order).
At any time you can convert a Field Service Task (or a regular Task) to a Helpdesk Ticket:
