You can activate the feature of displaying the margin in the sale order, so that on subtracting the margin from the total amount you will get the cost of the goods. For displaying the margin in the sale order, go to the settings of the Sales -> Configuration -> Settings and under the Pricing section you can see the option Margins just tick and activate it.
Once it is activated the margin will get displayed in the sale order form view. Either you can add a new field and compute the cost of goods from the total amount and the margin or use margin as such as still you can get the necessary information using it.

Unless you are using standard costs, COGS is not known until items are picked. The cost shown on the Sales Order is an estimate based on the past cost of each item.

Margin calculation shows as you said at the end of the Sales Order form.
I noticed an issue with the Cost column that was added in, as it only shows $0 for each line item, even when the products have costs associated with them. Thoughts?
