Can I somehow categorise companies in company groups (apart of the "Tagging" ability) ?
(Example categories I could need: Banks, Insurancies, Asset Managers, Wholesale, Governmental, ....)

Got it. This is in the "Sectors of Activity". It's uder "Sales&Purchase" / "Misc"

You can add m2o relation in res.company object of res.partner.category.
Add new group by in res.company search view.
above this way you can achieve concept of category in company also like partner.
