Except by using the Studio Module on Odoo Enterprise is there a simple way to set an "Help text" on an Odoo field ?
I would avoid to code anything

Hi,
You can define help text for a field from the developer tools without using the studio module.This customisation using developer option can only be done if the type of the field is Custom Field.
First enable debug mode from settings.
Then go to Settings > Technical > Fields.
Search for you field and open the form view of field record.Here you can edit the help text.
Please see the below image.
