Is it necessary to create on my mail server an email for catchall@mydomain.com, and then configure an incoming server for retrieving mails addressed to catchall ?

No. You may delete "mail.catchall.alias" in Settings/Technical/Parameters/System Parameters. At this moment, senders email will be used as the reply-to address.
